Why income is the number that matters
Everything in Steal An Egg routes through pet income. Income buys treadmill upgrades, upgrades buy Speed, and Speed unlocks the biomes with better pets. A player who focuses on income compounds; a player who hoards low-tier pets does not.
The scale involved is easy to underestimate. A starting Chicken earns $1 per second. Kitsune earns $1.8B per second — over a billion times more. That gap is why pen space should go to rarity rather than quantity, and why a single good run into a high biome is worth more than hours of safe farming lower down.

Does pet size change how much it earns?
Yes. A pet hatched unusually large earns noticeably more than a standard-sized one of the same species, and that stacks with any mutation. The exact curve is not published.
Is it better to have many cheap pets or one strong one?
One strong one, by a wide margin. The gap between the starting Chicken at $1/s and a Divine pet is a factor of over a billion, so pen space is far better spent on rarity than volume.
